Our second project for the Hauser Wirth & Schimmel family had us in the kitchen, so to speak, with Chef Wes Whitsell. Heavily influenced by his upbringing in rural North Texas, and named for owner (and spirit animal) Manuela Wirth.
We grabbed a handful of inspiration for some of the tangential brand pieces from the history of the location, which once housed the Globe Mills Flour company. The restaurant is a unique intersection of food, art, and community. Everything is housemade. The pickling program is super strong, and the chicken coop in the public garden area provides eggs for weekend brunch. Did we mention the smoked meats?
